The Cut: Unlike standard streaky or middle bacon, the short bacon slab is primarily made up of the lean eye of the pork loin with a much smaller, tightly trimmed portion of the belly. 

Culinary Use: Buying the bacon in a whole 2kg slab gives you the flexibility to thick-cut your own morning rashers, slice thin strips for carbonara, or dice it into heavy lardons for slow-cooked stews.
