- Prep: Remove from the fridge a few hours before cooking. Ensure the rind is completely dry (use paper towel).
- Boiling Water Trick: Pour a jug of boiling water over the scored rind in the sink, then pat dry again.
- Season: Rub the skin with oil and massage salt and pepper well into the scored areas.
- Cook: Roast at high heat (240° C) for 30–40 minutes to start the crackling. Lower the oven to 170° C–180° C and cook for roughly 30–35 minutes per 500g.
- Rest: Always rest the meat for 15–20 minutes before carving
