Otway's "Full Plate" style means the rack is wide, uniform, and carved with a generous layer of meat left over the bones. Because they are sold frozen, ensure you thaw them slowly in the refrigerator for 24 hours rather than using a microwave. Slow thawing ensures the high-quality marbling maintains its moisture during a long smoke or oven bake.
Because Otway Pork is a premium breed brand raised out of the Victorian outdoor-bred ecosystem, it commands a higher price tag than basic supermarket generic pork ribs.
- The Thawing Rule: Because a full plate rack is thick and heavy (typically weighing between 1.2kg and 2.0kg), never rush the defrosting process. Let the meat thaw inside its wrapper on a tray in the refrigerator for a full 24 hours. Avoid microwaving or using hot water, as this unevenly melts the marbled fat.
- The Membrane Removal: Once completely defrosted, flip the rack bone-side up. Use a butter knife to pry up the tough, shiny membrane (the silverskin) covering the bones, and pull it away with a paper towel. Removing this allows your BBQ spice rub to penetrate deeply into the meat.
- Low and Slow Cooking: Full plate ribs are tightly bound with connective tissues. They require a long, gentle cook at roughly 110°C to 135°C in a smoker or wrapped tightly in an oven for 4 to 6 hours to completely break down the collagen into gelatin.
