In the Australian meat grading system, YG stands for Yearling. This denotes beef harvested from young cattle that have no more than two permanent incisor teeth. Because the animal is young, a YG brisket offers a great balance of natural tenderness and excellent moisture retention, making it a highly sought-after grade for low-and-slow smoking or braising.
Common Uses for YG Brisket:
- Texas-Style Smoked Brisket: Rubbed heavily with salt and coarse black pepper, then smoked for 8–15 hours between 107°C and 121°C.
- Burnt Ends: The fatty "point" end of the brisket is cubed, glazed, and smoked a second time for a caramelized, highly rich BBQ treat.
- Braising & Slow Cooking: Cooked slowly in the oven or a slow cooker using savory liquids (like red wine, beef stock, or Worcestershire sauce), making it perfect for pulled beef sandwiches, stews, or Jewish-style holiday briskets.
- Corning / Pickling: The leaner "flat" cut is frequently brined with pickling spices to make homemade corned beef.
- Minced Beef: Trimmings and smaller cuts are highly prized for grinding into high-fat-content burger patties.
